Evidentally this was completely meant to be.  In a matter of three days, I have a commercial kitchen, insurance, license, holiday basket orders, a farmers market booth and an in-home cooking class coming up.

I'll be a baking machine next week, working on some pretty cool stuff actually.  Finally get some photos of my items so I can finish up that website and food costing.

I'm so excited! And I just can't hide it!  I'm about to lose control and I think I like it, ooh yeah!!

Strides

Sleep?  I don't need no stinking sleep!  Though these bags under my eyes and beginnings of a sore throat beg to differ, I forge on! (for the next few minutes before I plop into bed)

I feel confident in my decision still and have made quite a few strides towards my goal already.  Last night was my Nephew Leo's birthday party and I broke the news to my family. Though greeted with some resistance, I was mostly rewarded with plenty of "It's about time" comments, and overall support.  Which is good, because I'm going to pack on 10 pounds to each of you as I need taste testers when I'm doubling and tripling my recipes.

Last night I bought my domain name, woo hoo!! I pre-paid for a year:  http://www.lpspantry.com/ . I feel like, by committing myself to that and shouting from the roof tops that I'm doing this...I have to follow thru. I made up a logo that's a little more adult version of the one I made when I was 25, though I'm sure it'll change a few more times before I'm dead set on it, but I'm totally diggin' on it right now.  I think it's perfectly simple.  Plus, the clean design lends itself to color changes for different products.  Example: all my sweets will be the chocolate/pink logo.  My savory items will be a bright green with orange dots.  Packaging...that'll be so fun!!  Like wrapping small christmas presents...with latex gloves and a hair net on.  Bwah ha haaaaaaaa!!

My menu is almost set and my website is definitely under construction, but coming along nicely. I started my food costing today and am super nerding out on it.  It makes for a great word problem though:  If Leah can make 24 pecan bars in a batch, and she needs 2.25lb of butter to make a batch, but she buys butter in 4lb blocks at $9.99...how much does butter cost Leah per pecan bar?  

Now that I've successfully bored myself with that tidbit of knowledge, I think I'll say goodnight. 

Incidentally, with tax, it turns out to be $0.16 of butter per bar.

Epiphany

I took a truffle class today; I've always been curious how to make those perfectly coated chocolates that look like heaven and taste even better.  I did not, in fact, learn how to make those perfectly shiny balls of joy, but it was still a great class.   The instructor came out, she was about my age, and she has her own gourmet chocolate business.  During a break, I had the chance to ask her, how did she get her start?

She went on to say that after college, she worked as an event planner for a non-profit organization and she had a love/hate relationship with event planning...she's 31...grew up around food and spent most of her time in the kitchen...and I'm looking at her thinking, are you me?  She had enough of event planning one day and up and quit.  No plans, no idea what to do next, but she sure didn't want to work for someone else anymore.  She decided to follow her passion, and she's completely successful.

I left inspired. I've thought about it a million times...no, strike that...a TRILLION times.  I love to cook, I went to cooking school for goodness sake, but I cook for family, for friends, for myself. Starting my own business, working for myself sounds awesome, but...a little scary too.  But, what am I doing now?  Working on my fiancee's Grandmothers house and sending out hundreds of resumes to no avail.

So why not?  At least I can say I tried.  Today is the first day of my future business.  Can't wait to see what comes of it!
